4 parts ginger cordial
2 parts sugar syrup

In a cocktail shaker, combine all ingredients with plenty of ice and double strain before topping with foam. Serve in a champagne flute.
Foam Recipe
Place all foam ingredients in a pot and heat until almost boiling. Maintain heat and add 1 tsp. vegetarian gelatin and stir until completely dissolved. Strain into soda siphon with soda charges and fill until 3/4 full. Place in fridge and chill for approximately 3 hours. Shake and test foam. If foam has a trace of gas use less charges.
